Description
The Côtes Catalanes in Southeastern France is a winemaker's paradise. In the shadow of the Pyrenees, millennia of geological history resulted in varied terroir, with limestone and marl on one side and schist on the other. It is likely the most underrated region in France; so we reap the benefits of the insane value of its wine! Domaine Gardiés has been here for centuries, and today they operate organically, with biodiverse plots, manual harvesting, and minimal intervention. 'On s'en Fish' is mostly Cinsault, with a splash of Carignan. The result? Fresh-as-can-be, almost soul refreshing red juice, full of crunchy berries, a bit of a spice, and a silky texture that makes this almost too easy to gulp down.
