Gaillac: little name recognition, lots of history. A "Grand Cru" for the Romans during their occupation of Gaul, it predates both Burgundy and Bordeaux by over 1000 years in fine wine production; Henry VIII drank from gifted barrels of Gaillac at his wedding. It's now been largely forgotten, with only 5% of its production exported. Since 1975, the Rotier family has worked tirelessly to restore abandoned vineyards planted to the region's indigenous varieties, showcasing why Gaillac is worthy of a resurgence. 'Les Gravels' is a blend of Loin de L’Oeil (a Gaillac native) and Sauv Blanc, it's a mix of kiwi, green apple, soft white florals, and snappy acidity, refreshing and bright but with character in spades.
