10 minutes from the beaches of San Sebastian you can find our favorite organic cidermaker in the heart of Basque country. Poured at seemingly every great tapas joint around town (and always from as high a height as the bartender's arms will allow, for maximum fizz and ceremoy), this is tart, fresh, and citrusy, with minerality, a light effervescence, and a leesy, yeasty, almost saline character. This beautifully murky, super-serious sidra pairs with everything, but we love it most with with pepper-riddled sausage right off the grill.
