Vincent Couche is one of the Aube’s most compelling grower-producers—farming 13 hectares of biodynamic vines across the Côte des Bar and Montgueux. He’s a radical purist, eschewing chemicals, embracing low intervention, and treating his cellar more like a laboratory of living wine than a factory of fizz. Every bottle is a snapshot of place and process, built with tension, soul, and zero shortcuts.
The make up is 69% Pinot Noir and 31% Chardonnay. Clay and Limestone soil, Pinot Noir from Molesme (the commune in the North, not the vineyard in Rully) and Chardonnay from Chablis 1er cru “Cote de Cuissy”, fermented in amphora. It’s sultry, savory, and a little wild. Equal parts red fruit, chalk, and untamed charm. Fermented with native yeasts and bottled with no dosage, it’s the kind of wine that flirts with you, then steals your hoodie.
