This isn’t the sweet cider you grew up with. Eric Bordelet crafts this biodynamically grown heirloom varietal apple cider from 60 year old trees along the coast of Normandy. A former sommelier, he treats his ciders more like a champagne, siphoning and then allowing them to finish in bottle. This perfectly off-dry cider hits with notes of Fuji apples and caramel. Perfect for pre- or post-dinner quaffing with soft cheeses.
