Chiara Penati and her husband Michele Conoscente were Milan based agronomists, traveling throughout Italy to work with farmers on improving soil health before settling in the sleepy Paderna hills and starting their own vineyard and winemaking project. Their Bianco combines Favorita (field blended and co-fermented with small amounts of moscato giallo) and Cortese as well as Timorasso; everything is whole cluster pressed and ferment spontaneously in concrete vats resulting in a full and lengthy wine. Think of those early season peaches you can’t wait to get your hands on, and coat with olive oil, flaky salt, burrata cheese and crispy sage as soon as you do.
