The wines—originally created for some of the best restaurants in NYC—are serious stuff, too. In Sheep's Clothing Cabernet really exemplifies the Washington State terroir, possessing acidity that lends some freshness to an otherwise medium to full-bodied Cab with an old-world style structure. This is a complex wine with hints of dried herbs, anise, and bay leaf. The hint of smoke will pair well with grilled meats.
