It's hard sometimes to tell you how cool a thing like this is. Valdespino is one of the best producers of Sherry in all of Spain. There are three major reasons for this: its vineyards, its winemaking, and the length of ageing. Valdespino makes wines from a Grand Cru vineyard, Macharnudo Alto, which is located at the highest altitudes in Jerez on pure white chalk soils. They're the only house to ferment with natural yeast, and the wines are aged for extended periods of time, well beyond the appelation's rules: the added complexity and flavor are real. Pale-lemon in hue, it's dry, crisp and refreshing with a saline finish. Goes with all sorts of things, but this + seafood is a sixth Love Language.
