Chinon’s tricky. If you’re not yet a fan of the funk, tasting one of the earthier versions can set your burgeoning Cab Franc love affair back years. To put it mildly, the region’s well-known for old-school winemakers who ain’t afraid of the barnyard. The Messanges, though, is made by a biodynamic winemaker whose wines tend toward the clean, lean, and gorgeous. Raspberry, dusty cherry, wet rock, dried thyme, and vibrant acidity make this an excellent wine for aged goat cheese and fried chicken. (Not necessarily together. Although now that I mention it....)
