We've tried many non-alcoholic options and what we've come to realize is that some of the best wine alternatives aren't made from grapes at all, but rather from creative botanical concoctions made up of fruit extracts, teas, herbs, roots & citrus. The results are culinary, thoughtful, balanced beverages perfect for pairing with dinner or pouring at your next apero hour.
One of our absolute favorites is Acala, a project out of Lithuania founded by Martynas Žemavičius, a sommelier with 20+ years of experience working in fine wine in London. Acala makes a line of sparkling, fermented teas that offer the nuance & complexity of wine without the alcohol. They brew organic teas in spring water over live fire, ferment these teas in a variety of vessels, from oak barrels to stainless tanks, and finally blend the aged fermented teas with fresh juice, fruit extracts and fresh tea. And everything they make is organic and free from artificial flavors, colors, and preservatives.
From their lineup, there are two that we're particularly excited about: The Spritz
, made with orange juice, hibiscus, fireweed, marigold and wormwood, a compelling marriage of savory and sweet, bitter and tannic; and the White
, a beautifully balanced sparkler made with hemp, lemongrass and green tea with an impressive finish and beguiling notes of elderflower and citrus.
