Priced out of Champagne in the early 80’s, Phillipe Collin moved to the south of France to start his own domaine in the heart of the Languedoc-Roussillon. With a strong desire to continue making sparkling wine, Phillipe took root in Limoux, the coolest and highest appellation within the Languedoc, and thus perfectly suited for Champagne varietals! Predominantly Chardonnay, with a splash of Pinot Noir and Chenin Blanc, this lively and elegant cuvée features a fine bubble, wild strawberry and floral aromatics and a mineral, chalky finish.
