It would be easy to let Provence's prolific rosé production overwhelm and overshadow the admittedly smaller and less-recognized red and white wines in the region, but why do the easy thing, when a trip off the beaten Provençal path is so deeply rewarding? If you were to compile a list of the most important, compelling producers in Provence, and indeed in the whole of France, you would be remiss not to include Clos Cibonne, a property so historic that their "modern" era begins in the 18th century, when the Roux family purchased the land from a captain in the royal marines of Louis XVI. Nearly 200 years later, André Roux - instrumental in the created of the Côtes de Provence AOC - pulled up his Mourvèdre vines and replaced them with Tibouren, an ancient variety that dates back to Mesopotamia. A thin-skinned variety prone to rot, which requires constant air circulation, and thrives in areas where it can benefit from a salt-kissed, sunny sea breeze - Tibouren is quite literally the perfect grape for this historic coastal estate.
