Husband-wife team David Marcel and Loreta Garau are making wine the traditional way, Pipeño - hand-harvested, dry-farmed, little to no sulfur, barely filtered. The 120-year-old Pais grapes (aka Mission/Listan Negro) were brought over by Jesuits and trace back to the Canary Islands, which comes as no surprise, considering the rich volcanic and granite soils that define the powerful mineral core of these wines. With a good splash of Carignan, we get all that swoon-worthy, bright, blue-pink fruited juiciness, rosemary-thyme herbality and freshness of Pipeño. Chill it and swill it with friends.
