First off this wine is made by Cistercian Nuns. (We requested an in-store tasting + chant, but they declined.) Unfined and unfiltered, it’s a fascinating glimpse of what white wine probably tasted like (or at least was made like) a few hundred years ago in Montefalco, Italy. A blend of Trebbiano, Verdicchio, and Malvasia, harvested together and co-fermented. The 2020 vintage of Coenobium is gorgeous: more white pepper and citrus notes this year atop its classic Coenobium base of green apple, fennel frond, sea salt and honey.
