We already knew Kabaj's Jean Michel Morel was cool from his tractor stories. And we knew he was a wizard with skin contact Slovenian varieties aged in clay amphorae. But he *also* makes killer red bubbles from... Pinot Noir? Many of us didn't even know Pinot was grown in Slovenia, a place we tend to look to for vinous esoterica like Refosk. Guess what? The wizard's as wizardly with grapes you know! More of a rosé pet nat with lots of apple and cranberry notes, it's soft and textured with gentle bubbles. Tart, fruity and refreshing with a hint of savory. Pizza wine par excellence.
