Based in Saumur, Côme Isambert makes amazing wines, ciders and other concoctions that don't fit neatly into either category. What's true across the board is that all fruit is produced organically, and is vinified with minimal interventions or additions. Here he hits up one of his friends in Normandy for crazy-old-rooted pears, and then builds complexity in the bottle, allowing them to spend 18 months on the lees. Aromatic, dry and incredibly refreshing, this makes for a perfect aperitif (only 7% ABV!) and/or a perfect Thanksgiving move.
