Founded in 2008 by Chilean terroir superstar/jazz lover Pedro Parra, Clos des Fous works to counteract the stereotype that Chilean wines are boring, industrial, green and overripe. He produces minimal intervention wines from organically grown grapes in extreme granite terroir. The nose and palate reminds of classic Riesling expression—green apple, lime citrus, stone fruit—along with a touch of cheese and salt. It is bone dry and adds an exuberant level of acidity. As the name says ‘Pour Ma Gueule’ (for my throat), a nod to wines Parra wants to make and drink for himself! Pairs awesomely with Pad Thai.
