Raphaël Fumey and his wife Adeline are now making some of the most interesting artisanal wines in the region; organically farmed, they're making natural wines that are as dynamic as they are pure and stable. Nutty and complex, with notes of green apple, toasted walnuts, almond milk and toasted curry spice. Maybe even salty butterscotch and cream. A great match for a chicken and morels, a piece of well-aged Comte, or just you and someone you want to spend the evening talking to. Exquisite.
