Already a legend before his death in 2008, Didier’s cult-like reputation has only grown since then. His “Silex” is one of his top cuvées, made from a selection of 50-year-old vine parcels all hyper-rich in silex (clay/limestone/sand) soils, and it’s considered one of the most profound expressions of Pouilly-Fumé’s flint-rich soils ever bottled. Needless to say? There’s barely any to go around. This is Sauvignon Blanc’s apotheosis, and an all-out sensory explosion: herbs you never knew existed, tropical fruit you dreamt of once, and the flinty minerality its named after.
